Gopchang

Tentang

Sundae (sosej darah Korea) dan gopchang (usus lembu) di Ikseon-dong.

The gopchang arrives at your table in a greasy-lidded aluminum pot, and when you lift it, the steam carries the kind of richness that makes you understand why people wait an hour on a Friday night. Doenjang and perilla powder thicken the broth into something halfway between gamjatang and stew—not the bright-red chili base most gopchang joints default to, but earthier, almost savory-sweet. The woman running the place doesn't coddle: she'll nudge you toward the medium size even when you insist on small, and she's usually right. The small feeds three adults with leftovers. The medium buried one table under so much tripe they gave up and left the fried rice undone. What keeps this place packed isn't just volume. The gopchang itself comes out tender and clean, no funk, no chew—clearly someone back there knows the difference between rinsing and actually prepping intestine. Sundae bobbing on top is blood-heavy, not the glass-noodle kind, and you're told to drop it in last so it doesn't disintegrate into the soup. The whole production is designed for soju: sharp, fatty, with a bottomless kettle of broth sitting on a shelf by the door that you're expected to fetch yourself. Late in the night, after you've drunk enough to forget the two-hour table limit, you pour sesame oil over the dregs, chop in kimchi and any surviving gopchang, and scrape a fried rice from the pot. Go light on the gim—the reduced broth is already salty as hell. Weeknights before six, you'll wait ten minutes. Saturdays after seven, closer to ninety. There's no app, just a whiteboard outside. Cash is no good here—bring a card. The bathroom is a relic, so stop at the subway on your way. Your coat will smell like perilla and pig fat for the rest of the evening.

  • Avoid Friday/Saturday evenings—waits exceed 1+ hours. Visit weekday early evenings (5-6 PM) for 10-30 min wait.
  • Order 소 (small) for 2 people, 중 (medium) for 3-4 people; portions are enormous—reviewers often overestimate sizes needed.
  • Self-service broth refill station by entrance; grab the kettle yourself. Fried rice requires DIY cooking with sesame oil and nori provided.
  • Add kimchi and use chewy gopchang for fried rice topping—this is the signature finish locals swear by.
  • Expect lingering odor on clothes; not ideal before taking subway. Restaurant is cramped and old-school (expect outdated facilities).
