Hadongkwan is not a restaurant so much as a Seoul constant: gomtang since 1939, the recipe famously unchanged across more than eight decades — clear beef broth, rice already in the bowl, slices of brisket and innards per your order, and a daily rhythm that starts at 7am and ends whenever the broth runs out, often before the posted 4pm close. The discipline is the legend: no menu sprawl, no seasoning in the kitchen (salt and scallions are your job, the kkakdugi juice your secret weapon), and a clientele of old-Seoul loyalists, market men, and pilgrims who treat the morning bowl as heritage. Eighty years of doing one thing has made the thing itself definitional — this is the gomtang other gomtangs are measured against.
