배무진함흥냉면
About
Spacious Bangbae-dong restaurant serving springy Hamhung-style naengmyeon, rich galbijjim, and simmered stone-plate boiled beef.
Tucked between Naebang and Bangbae Stations in Seocho, Baemujin Hamheung Naengmyeon is a spacious neighborhood dining room that quietly masters classic northern-style noodles while doubling as a haven for simmering meat dishes. The dining room fills quickly with solo diners and local office workers at noon, only to transition into evening gatherings over steaming platters. Every table begins with a steaming kettle of complimentary onyuksu, a deeply savory, salty beef broth poured into cups to warm the stomach and awaken the palate. The noodles follow orthodox Hamheung traditions: thin, taut starch strands cut twice with kitchen shears. The hoe naengmyeon delivers a lively bite, layering sweet, pungent chili sauce over chewy, seasoned raw fish and cool julienned cucumbers. For something pristine, the mul naengmyeon presents a crystalline broth crowned with shaved ice, retaining an aromatic beefiness that requires no extra vinegar or mustard to hold its own. To round out the bowl, oversized handmade mandu arrive packed with coarsely textured minced pork and vegetables beneath thin, supple skins, releasing seasoned juices that cut cleanly through the broth. Yet Baemujin operates with equal prowess as a braising house. Its signature so-galbijjim yields a mountain of tender, thick beef ribs naturally sweetened with honey rather than artificial additives, taking about fifteen minutes to simmer to falling-apart tenderness. When the temperature drops, evening tables often pivot to the stone-plate suyuk (dolpan suyuk). Delivered bubbling over a portable burner, the iron-rimmed dish is crowded with pre-boiled cuts of beef shank, brisket, tendon, and thick stalks of scallion. As the rich broth reduces, diners continuously top off the pan using refills of hot broth from the onyuksu kettle, lifting tender meat slices into wasabi-laced soy sauce alongside bites of freshly dressed geotjeori kimchi and sautéed eggplant.
