고바우
About
Neighborhood jokbal and bossam.
A grey storefront at the corner near Dongmyo Station, in business since 1984, marked by a hand-painted sign and a paper waiting list taped to the doorframe. The grill pans at 고바우 run so hot that staff swipe a strip of beef fat across the surface before laying down the first cut — watch it sizzle and smoke, coating the metal in a thin sheen that will seal in every drop of juice. Order the moment you sit. Two-hour table limit, house rule, non-negotiable. The 1++ hanwoo arrives on wooden trays: blushing sirloin streaked with ivory fat, thick-sliced chadol baki marbled like modern art, jebi churi with its clean red grain. The woman who runs the room checks each table personally, drops off extra mushrooms and onions without asking, refills the scallion relish before you notice it's gone. One blogger overheard regulars at the next table ordering only chadol — "the standout," they said — so she followed suit and called it the best bite of the meal. The brisket holds its shape on the grill, releases a buttery char, needs nothing but coarse salt. Sirloin comes with a bonus strip of salchissal tucked underneath, its marbling so fine it almost melts before it browns. Skip the soy dipping sauce. A cube of tofu floats in the homemade doenjang jjigae, flecked with hanwoo trimmings and thick enough to cut the richness after your fourth slice. Weekday mornings before noon: walk straight in. Evenings and weekends: write your name on the clipboard by the side entrance, expect 30 to 90 minutes, maybe longer. Cash and card both accepted. No English menu, but the handwritten board lists six hanwoo cuts and three pork options, all domestic, all by the 200-gram portion.
Local tips
- Arrive early or reserve via phone (02-2232-8803) — weekends & evenings have 30-90 min waits; handwritten waiting list at entrance.
- Order immediately upon seating — house rule due to high demand and 2-hour table time limit.
- Skip fancy condiments; salt-dipped 1++ hanwoo is perfect alone — beef quality speaks for itself.
- Try char-grilled Chadol baki (brisket) — reviewers call it the standout dish over more expensive cuts.
- Pair meat with complimentary side dishes and Doenjang jjigae (3,000₩) — homemade stew cuts richness and adds satisfaction.
