Stew Jung-gu

About

Quiet Chungmuro eatery serving clear Jeju black pork soup over rice alongside cold boiled pork and traditional spirits at a counter.

Tucked into an alleyway near Chungmuro Station, Jinsim strips away the heavy, steam-clouded tropes of a traditional gukbap parlor. Soft classical music plays across an intimate room lined with books, stainless-steel counters, and a long dining bar facing an open kitchen. It feels more akin to a minimalist Tokyo diner than a typical Korean broth joint, making it a natural haven for solo diners looking for a quiet counter seat. The kitchen builds its menu around Nanchukmatdon, a prized Jeju black pork breed. Departing from dense, opaque pork stews, Jinsim ladles a pale, remarkably clear broth over pre-submerged rice in the classic toryeom style. The soup is clean and savory, topped with generous mounds of thinly sliced pork and fresh scallions. Diners choose between three preparations: the clean, understated original; a spicy eolkeun variant; and a distinctive Cheongyang yuja broth, which layers citrus brightness and sharp pepper heat over the savory base in a manner reminiscent of yuzukosho. On the side, earthenware jars on the counter supply tart, well-fermented kimchi to cut through the broth. Small plates round out the meal, including chilled, semi-frozen slices of naengjeyuk served with salt and wasabi, alongside sweet-and-sour seasoned pollack raw fish (myeongtae hoe muchim). Rather than pushing quick turnover, the drink menu actively encourages lingering over a slow pour: the kitchen stocks glasses of warm sake (jeongjong daepo), draft beer, Hallasan soju, and regional barley and grape distillates. On a rainy evening in Jung-gu, alternating between a spoonful of hot, citrus-laced broth, cold pork, and a sip of clear liquor offers an uncommonly refined rhythm for a weeknight supper.

Local tips

  • Rice comes pre-mixed inside the hot soup bowl (toryeom style).
  • Expect lunch rushes on weekdays; solo diners can easily grab a counter seat.
  • Try the Cheongyang Yuzu pork soup for a unique citrus and spicy kick reminiscent of yuzukosho.
