About

Galmaegi-sal BBQ specialist. Charcoal grill, soju pairing.

The pork skirt steaks here come rolled around fat batons of scallion, marinated in yogurt for sixteen hours, then grilled over charcoal until the edges caramelize and the white ribbons of allium soften into something halfway between onion confit and charred leek. The yogurt — not a gimmick — breaks down the muscle proteins enough that the meat turns tender without losing its bounce, and the mild tang doesn't announce itself so much as deepen the baseline pork flavor. You get a choice: this scallion-stuffed version, or the yeogeuteu jumulreuk, which arrives white with yogurt marinade and cooks into something closer to a sweet soy glaze. Both are good. The scallion one is the move. It comes with a house-made scallion kimchi that locals pile directly onto the lettuce wrap along with the meat, and a shrimp-garlic dipping sauce salty enough to cut through the fat. The staff will scissor your first bite into small pieces and tell you to eat it plain — do that, because the funky-sweet depth of the aging shows up best without interference. The room itself is large, high-ceilinged, vaguely retro-pocha in affect, with enough space for a hundred people and a steady rotation of old Korean pop overhead. You can smell the charcoal from the entrance. Weekday evenings fill up fast — thirty to sixty minutes is standard — and weekends book out by six. Reserve through Naver if you can. Walk-ins are allowed after six on weekends, but expect to stand. If you participate in the Naver receipt-review event, they'll comp an order of jangjakkkeopddegi (wood-fired pork rind), which takes about fifteen minutes to prepare, so order it early or risk waiting while your tablemates finish. Card only. No English menu, but the photo board on the wall does most of the work. The grill runs hot — keep the heat at medium or the yogurt will char and turn bitter before the meat cooks through.

Local tips

  • Reserve via Naver (네이버 예약) in advance—weekends book up by 6 PM; walk-ins accepted after 6 PM weekends only.
  • Grill at medium heat to prevent yogurt-aged meat from burning; high heat causes charring and bitter taste.
  • Ask staff to cut first bite into small pieces—enjoy plain without sauce to taste the yogurt-aging effect.
  • Pair with house-made scallion kimchi and special shrimp-garlic dipping sauce for maximum umami depth.
  • Order 'pork rind' (장작껍데기) ~15 min before finishing meat so timing aligns; optional with Naver review participation.
