The soy-braised ox tripe arrives pale, sliced thin, stacked in deceiving layers. You think you've ordered small. You're wrong — the dish keeps revealing itself, sheet after translucent sheet, each one glossy with gentle marinade and flecked with sesame. This is 부민옥's call card, the reason office workers since 1956 have climbed narrow stairs to private rooms smelling faintly of tripe and scallion. The kitchen serves it warm, not scorching, so the chew stays tender. Dip it in the soy sauce they bring alongside, pile on raw scallion and onion from the center plate, and pour soju. Every regular does. The other move: 양곰탕, a milky broth so clean the kitchen sends it out unseasoned. They're daring you to notice the depth before you add salt. Beef tripe floats in skeletal broth made from ox bones boiled long enough to go white. It tastes like homemade bone stock, the kind someone's grandmother simmers all afternoon. Adjust the salt yourself, crack black pepper over the surface, let a cube of radish kimchi bob in the bowl. The 육개장 draws the lunchtime crush — whole scallions, shredded brisket, enough gosari fern to bury the rice. Mentholated kick, no grease. The room fills with men in belted slacks drinking before two o'clock. Weekday lunch wait hits 30 minutes by 11:45; dinner weekends can reach an hour. Book by phone or arrive at opening. No English menu. Card and cash both work. Closed Sundays, break from 3–5 PM.
