About
Long-running Sindang beef tripe specialist known for packed small intestines, complimentary raw liver and tripe, and table grilling service.
Operating along Dasan-ro just outside Sindang Station Exit 6, Sindang Hanwoo Gopchang carries the lived-in patina of a specialist feeding night owls since 1994. Previously known as Jangdari Gopchang, the veteran venue has seen a recent swell of attention thanks to endorsements from Choiza and Chef Yun Nam-no, drawing crowds willing to log into the Tabling queue system during peak dinner hours. The smoke-tinged dining room is unapologetically old-school, outfitted with personal table fans and floor circulators to combat the heat of the grills. Service is brisk and utilitarian. As soon as you sit, banchan hits the metal table: raw liver and chewy omasum with sesame-salt oil, crunchy cucumber and carrot sticks, sliced kimchi, and an earthenware pot of doenjang-jjigae that the kitchen will refill once on request. The standout accompaniment is the dressed garlic chives, meant to be eaten fresh or tumbled directly into the rendered beef fat on the hotplate. Diners can choose the mixed platter—combining teukyang (abomasum), daechang (large intestine), and makchang (entrails)—or order individual cuts directly, a welcome flexibility for purists who want only so-gopchang (small intestine). Staff grill every order at the table alongside potatoes, onions, mushrooms, and complimentary slices of yeomtong (beef heart). The so-gopchang arrives packed with rich, nutty marrow (gob), while the thick rounds of daechang blister until crisp outside and molten within. Note that additional meat orders require a two-portion minimum, making it practical to front-load your initial order. The meal pivots predictably, yet essentially, toward the end: a mound of flying-fish roe fried rice (nalchial bokkeumbap) scraped flat across the cast-iron plate to pick up the lingering char and scrapings of fat. Pair it with a fresh scoop of the complimentary stew, washed down with cold soju in true Sindang tradition.
